What is the best all-around tire size for an H2? Stock 315x70Rx17 or something else?

If you don't want to lift/level your truck, then 315x70Rx17 are probably ideal to avoid excessive rubbing.
If you don't mind tweaking the torsion bars or adding some Truxxx/GM-Green keys then I would say 37x12.5s are the way to go. The little extra added meat under a basically stock-height truck looks pretty badass IMO.
If you're gonna lift it then the sky's the limit...
Keep in mind; as your tires get taller, your MPG gets smaller.

Running 35x12.50x18's now but wondered if the stock 17's would improve mileage and handling. The 18's are a little squirrly on slick roads and seem to hydroplane on water.

your rim size will not affect your MPG, that will be the overall tire size.
you might find it easier (i.e cheaper) to buy tires for the 17 inch rim as opposed to an 18, but thats it.
35 inch tires are stock, and personally leave too much room in the wheel well for me.
37 inch tires are a good fit. it closes up the wheel well good enough, and should have came stock on the H2
38,39,40 inch tires would be the perfect match. fills the wheel well up, andmakes the H2 look like a beast.
