Need some opinions/info on headers. Is one brand better than another? Can someone also explain the benefits of the different coatings none, ceramic, etc.

I just installed my Gibson stainless steel headers today. Too early to tell if there is a difference.
I have the cermic coated header on my H2. They have been on my truck for about 6 months and still look brand new. I chose the Other Guys headers, they are a longer tube than the SMA, JBA or Gibson. Cutting and welding was necessary for these, but the performance is better. I had a muffler shop install them for me.

I installed Edelbrock shorties on mine. I saw a nice difference in low end torque which was welcomed with my 37 inch tires.
