The Scotch Bonnet (Capsicum chinense Jacq.) is a variety of chile pepper similar to and of the same species as the habanero. In my limited experiences Scotch Bonnets run about 100000 to 125000 scoville units, Habanero's run about 325000 to 350000. If you are going to use them in cooking remove the seeds and veins (ribs) from inside the pepper. That is where most of the heat is. RYD |
