CHILI COOK OFF

Okay, it's that time of year again. For the past three years I've been hosting a chili cookoff where everyone brings their best chili. We put each recipe into a separate numbered container and put it out for tasting. Then we all turn into judges and vote for the best recipe, whilst sipping an adult beverage.

Do any of you have a super secret Award winning recipe that you'd care to share?

I won't share my award winning chili recipe but I will tell you anyone who uses ground meat of any kind in chili needs to be castrated or spayed...

Why? Do you use meat in it at all? What about Beef tips? Or do you just make it with beans?

I like to make mine without beans. I use several different types of chilis tho, and no it's not blazing hot. I just wish I had written down everything I used.:o :D

Re: CHILI COOK OFF

ground turkey breast
1. It tastes much better
2. It's easier
3. It's cleaner, nothing to drain after cooking it
4. It's what I use
5. It has never tried to kill me before like ground beef has

Side note: It is to be eaten solely by saltine crackers, no spoons allowed.

Some ground beef, chili mix, different types of tomato stuff, beens and the most important part all: The crock pot for 8+ hours.

Anything can taste good if it sits in a crock long enough.

I like PIKE Chili in April. It's whats for dinner!

Serious note: Pheasant Chili = GREAT!

Re: CHILI COOK OFF

The original Chili did not have beans and the early Spanish/Mexicans did not have meat grinders.

Beef/pork/goat/lamb pieces, onions, garlic (just a little), a variety of chilis from mild to hot, tomatoes and tomatillo, spices, tequila, aloe, cactus and a few secret things...

Re: CHILI COOK OFF

I used several different kinds of meat. Tips, sausage links, coarsly ground sausage, brats, chicken, pork roast cubed.

Chili powder, tomato paste, tomato sauce, onions, garlic and bay leaves.

No beans.

A jar of "Mole' " sauce cooked separately and seasoned to taste (that's a secret I will only share with my best friends).

Add the Sauce and stew for about 2 hours. Serve with homemade tortillas, (another secret I will only share with my best friends).

Chipolte Chiles (dried).
Not too many. There powerful.
They give it a smoky flavor.

Google: Chugwater Chili

Re: CHILI COOK OFF

Okay, I went and got several different kinds of peppers and I'm using them all. I think I can do this without any 4 alarm phone calls.

2 or 3 jalapenos (seeded)
1 habanero (seeded)
2 pablano (instead of green pepper)
diced green chillis (adds sweetness)
2 or 3 Anaheim peppers
3 seranno peppers ( not as hot as jalapenos)
1 yellow pepper
1 lg onion
garlic
1/2 fresh squeezed lime
6 or so diced tomatoes, or I'll add some cans
A dash or two of chili powder
mexican oregano
1 lb ground beef
1 lb ground pork
cilantro to garnish

MMMMMMMMMMMMMmmmmMMM! It's only 9am. Is that too early for a Pacifico with lime?:o :D
