It is for freezing potential as well as better emission ratings. I have always used 160 degree thermostats in my street rods. The newer engines run a 190 degree t-stat. The hotter the engine is the more emissions it burns off. There fore I have a 160 t-stat and coolant bypass. I live in the Houston area winter here is about 28 degrees over a 3 hour period for 1 night.
