As of right now my main "suspect" is a friend of my roommate. I asked one of the neighbors if they saw anyone stop by and the only person they noticed was him. My roommate hasn't been able to get ahold of him since...so we will see what happens when we track him down.
Luckily I still have the box with the S/N on it...so if they try to pawn it off it should be fairly easy to find. If they decide to keep it for themselves then it will be a little bit more difficult.
