Cooked for my MOMMIE...she didn't want to go out so I made 2 Roast Ducks on the BBQ with a homemade Orange/Blueberry Glaze, Fresh Baked Sweet Potatoes (cooked for 90 minutes on the grill) didn't need any brown sugar or butter for these babies...A very fancy Spinach Salad with Red Onions, Tomatoes, Baby Carrots, a little Kosher Salami, Aged Chedder and a Homemade Vinigarette Dressing of EVOO, Lemon Juice, Brown Mustard, Minced Fresh Garlic, Minced Fresh Onion and a very small amount of Kosher Salami minced very fine...Let the vinigarette marinate together for about 2 hours wisking every 10 minutes...
For dessert I made Baked Stuffed Apples...Used Fuji apples this time, washed and cored...the stuffing was made from chopped raisens, chopped walnuts, fresh blueberries, honey, ground ginger and cinniman with about 1/4 cup of water and 1/8 cup of lemon juice...let the stuffing simmer for about 45 minutes, cooled & then stuffed the apples and baked at 350 f for 40 minutes...
Made her VERY HAPPY ...!!!
