Above 30" (or above the hood) you engine will continue to run (probably), but there is a good chance of damage to elec. componenets & water leaking into places it shouldn't be.
PS - If you're driving through any water of any depth, check the geared hubs afterwards - even though oil isn't leaking out, water may have leaked in.
doors will definitely leak. Depending on length of time in the water the amount will vary. I've done river crossings at a comfortable pace and had little if any water come in, but if you are moving very slow or bog down fully expect water.
The truck can go deeper then 30" but (disclaimer, take no responsibility for actions) as mentioned you run the risk of hydrolocking if you don't have an extended snorkel. Also have exhaust concerns w.o. deep fording kit and electrical. As for the electrical the general rule is to keep the fuse box above the driver side wheel from getting exposed to prolong water exposure and certainly submerged.
Salt water all bets are off and your asking for trouble playing in deep water. Corrosion.
