Who here is good at Wok cooking?
I just got a new Wok for Christmas and need some input of things I need and need to do so as not to ruin it or destroy my first attempt at cooking in it.

well I figured out a little. do not use frozen green beans...thaw them first. and oh my does it cook chicken fast. I did the slice and dice on 2 lbs of chicken breast and it cooked in about 5-7 miinutes, way better then my Echo pan... I'll save it for burgers.

is it steel , alum or cast iron ???
is it for use on a gas stove or is it electric ???
how big is it ???
is it using a non-stick surface ???

well after reading a bit about them on the web I found I have a steel teflon coated one. my biggest concern is how to tell when its at the proper heat. the info I see the most about cooking with one is to watch for smoke when it reachs its optimum heat. I have an electric stove so its easy to set the heat, but I have to learn where it needs to be to get the right cooking heat without seeing smoke.

if the food does not cook, not enough heat....if the pan melts or warps, too much heat...hope this helps......

I gotta tell you from my 42 years of cooking, eating, teaching cooking, chefing, BSing and other things...
its dam hard to cook with a WOK on an electric cook top...almost impossible

well I did ok for the little I used it yesterday. even on an electric stove its a huge difference in fry cooking. the fact it has a flat bottom makes the diff as compaired with a standard wok. if it didn't touch the burner then yes it would be very hard to work with.
