One more point. Assuming that you don't have a problem, (leaks, plugged radiator, etc) if the temps are running 120 degrees outside, I highly doubt you are going to keep any vehicle running 160 degrees. Once the temps start to rise, it doesn't matter what thermostat is in there.

It simply means that the thermostat is open at 160 degrees and in your case, stays open ALL the time.

Since the sc is making alot of boost at lower rpms, I would think that the sc isn't causing the temps to run up (Just because you have a sc) I'll bet in those temps (ambient air temps of 120 degrees, running 210 is very normal)

Just my .02 worth.
