Default Need Help...

I am hosting an afternoon dinner on Sunday for about 10 people maybe 12.

We are having ribs. Beef I think. Ken fixed some ribs last week that were really good....and I am not a meat off the bone kinda person.

So my question is:

What goes with ribs?

I know I could do the ole potato salad and baked beans route. But I don't really like baked beans and everyone coming had my potato salad July 4th. They love it, but that is what I always fix...yada yada yada

I was thinking mini corn muffins or cheddar garlic biscuits....with Waldorf salad and a vegetable.....I dunno

Any suggestions?

seriously though ribs with some good white corn on the cob for a side rocks. Me loves some corn on the cob...yum yum...boil with a little surgar and then after boil some salt...hmmmmmm

Biscuits with honey butter
corn on the cob
sauteed spinach
grilled vegetables, squash, zuchini etc...

Dessert, Try Grilled Bananas, sliced long way and grilled, and grilled peaches with a little brown sugar on them for carmelization, put the two together in a bowl with some whip cream on top or over some biscuits or your cornbread under them.

Great idea Hucky.

I've offered to grill the veggies before, but I haven't been taken up on it yet.

We're doing both KC and Memphis style ribs so everyone should be happy.

If your doing the Ribs on the Grill, beef or pork, the Corn Bread/Corn Muffins idea is excellent. Consider making a Cinnamon/Nutmeg Butter to go on the Corn Muffins

As far as a starch I offer you 2 suggestions. The first is a Macaroni Salad. Since your potato salad is such a hit just sub the macaroni for the potato. The second is Baked/Roasted Sweet Potatoes. With these I first wash them real good. Then wrap them in foil with just a small pat of butter, not to much , just a little. Wrap them good and put onto the grill early or into an oven. When they are done remove the potato from the foil and CHAR them on the grill. I mean till the skin is black, don't crack them open. I promise you they will be super sweet, soft and yummy. You won't need any butter or brown sugar on them at all.

Do not make a regular salad with lettuce. Instead slice some BeefStake Tomatoes thick, some Red Onion and some Part Skim Mozzarella Cheese. Chop some Fresh Basel. Interleave the BeefStakes with the Onions and Mozzarella, make or buy a good Italian Dressing and pour over the salad, garnish with the basel. You need to use a large GLASS shallow bowl/dish for this. Cover with plastic wrap and marinate overnight in the frig. Just before serving put a little more FRESH chopped basel on top.

For a VEGGIE try Grilled RED, YELLOW & ORANGE PEPPERS (never green), Zucchini sliced length ways, Large Fresh Mushrooms, BABY Asparagus, also in the kitchen make a pot of DEEP SOUTH SUCCOTASH which is Stewed Tomatoes, Fresh Okra and just a little bit of Corn Kernels, maybe a hint of minced onion. NEVER EVER EVER EVER use lima beans.

OK, Dessert... Simple and easy to do. Buy some Pound Cake Loaves, Fresh Berries (blue, black, ras, straw). Wash the berries real good, cut the pound cake in large cubes, mix both and top with REAL FRESH WHIP CREAM...

If you need Exact quantities or receipes for italian dressing or anything else let me know...

You can prepare the macaroni salad the day before, the sweet potato can be washed, buttered and put into foil the day before, of course the tomato salad the day before. You do need to cut the Veggies just before use, the dessert only takes 15 minutes and the succotash an hour before...

When we do our smoke offs, usually ribs and a pork shoulder, we'll have some cheesy hash brown potatos my wife makes, corn on the cob cooked in the husk in the fire, baked potatos wrapped in foil and baked in the fire, sometimes a pierogie cassarole, baked beans....trying to think what else. my wife makes some sort of festive salad which has pears, lettuce, cashews and a bunch of other stuff......oh and her famous frozen peanut butter pie for dessert.....booyah!

i have the perfect recipe/side dish combination for ribs, and although it is easily prepared with everydays items in the pantry, i would have to personally show you the proper way to mix them.....

Aw you guys!!!

I didn't expect so much! Thank you!!!!

I've got some great ideas, it's a birthday party so desert is out, I am picking up the cake in a bit.

I am going to the store as well. I am thinking, these jalepeno corn muffins, but mini ones- they sound good to me:


CORN MUFFINS WITH JALAPENO
1 c. flour
1 c. yellow cornmeal
1 tbsp. baking powder
1/2 tsp. salt
1 egg, beaten
1 c. buttermilk
2 tbsp. honey
1/4 c. cooked corn kernels
1 jalapeno pepper (seeded and minced)



Preheat oven to 375 degrees. In large bowl mix together all dry ingredients. In a medium bowl whisk together eggs, buttermilk and honey, then add corn and jalapeno pepper. Add dry ingredients to liquid ingredients and use a large rubber spatula to combine them well. Lightly oil a 12 cup muffin pan. Pour batter and bake 20 to 25 minutes. Makes 1 dozen.

Then, some Cucumbers and onions maybe, make RYD's tomato version but may stick to the vinegar dill sugar Cs and Os. Not sure.

Then I will probably bake potatoes, I normally brush them with olive oil, sea salt and a few spices and bake them until a lil crispy on the outside. Then have fresh bacon, spring onions, cheese, butter sourcream.... for them.


Then have hamburgers and all that stuff in case the ribs suck or something.

But I still don't know, I will get a lot of stuff to make what you guys mentioned and figure it out tonight- and some later on.
