Wanted to be cool like everyone else, so I put in a rear camera.

LCD Cost - $99 at Frys (Diamond Audio)
Camera Cost - $50 at Frys (XO Visions HTC-200) And could have got it even cheaper off ebay

I've already ordered a 2 pole, 6 way switch from allied electronics, I'll be installing a few other cameras and then using the switch to...well...switch between the cameras.

Camera locations:

Roof Rack (to check for clearances and make sure everything is staying locked down)
Front Axle
Rear Axle
Front lower grill (just because I think that would be cool)
Any other ideas? At $50 a piece, the cameras are cheap and it's just a matter of wiring (easy)

This particular LCD also has a video out, and I'm going to order a Archos or other PVP with video in - eventually I'll be able to capture video of the cameras and post somewhere. Now, if I could just get the time to go to Moab with the rest of you!

Nice affordable setup. No blind spots anywhere on your rig.

So how is the viewing angle of the camera from the position? Does it cover enough area that you can see what you might hit on either corner? Thinking about picking up a couple of those.
