You could check several things............
Water pump for leaks
Thermostat
radiator fluid level and condition
Overflow coolant tank level
Hoses for blockage

I'm kind of leaning toward your thermostat being stuck closed. If this is true, then your engine would het up and get hot becuase the thermostat isnt opening up to let the "cooler" water from the radiator into the engine to cool the motor back down and circulate the hot water back to the radiator for another cooling.
I could be wrong, but if you have no leaks on the ground, then the coolant has to be in there somewhere, its just not getting moved around well enough.
If it were the water pump, you'd see that leak from the front of the motor. Most water pumps have a "weeping" hole that helps to signal this.
