I tried the blue cheese on Filet a couple of nights ago just because of this thread and...............YUK!!

I moved it over to the mashed potatoes instead! It was ruining a perfectly good steak!

Cold smoking with Jack Daniels wood chips is the ticket.

Remove the bottom bowl of your R2D2-looking smoker and fill it half full of JD chips. Heat the bowl over a stove flame until the chips just begin to smoke. Quickly put the bowl in the bottom of the smoker. Put two cans of Sterno under that bowl so the tip of the flames touches the bowl. Put the best filets you can find on the top rack (and don't butterfly them).

Walk away for three hours and don't lift the lid. Open the side door to check on your chips and sterno if you must but only for a short period. (You're cooking with very how heat and don't want any to escape.)

After three hours (or four, if you like), pull the filets, put them on a cookie sheet, salt and pepper to taste (nothing else) and slide under a hot broiler for 20 minutes.

Remove and enjoy.

Out west our cattle gratefully die like samurai to serve their masters. If you must sully their honor with parsley, sage, rosemary or wine, GOOD GAWD man, do it in a sauce on the side.

And that is all.

Until someone starts a thread on serving octopus. I'll be all over that.

Speaking of PA (and steaks), my wife is from Beaver County and she makes Pittsburgh steak salads. Ever had one?

Yea, the steak was cooked Pittsburg style where its sear Just about black on the outside, med-rare inside. Man it was really good. Perfect for a day like today in PA, fall is in the air.....

MMMMM!

It was good! I need to do that again sometime. I am going to grab some taquila this week - and I am going to do the margarita steak. I will let it soak the day away. By the way - this stuff is grilled! All the steak I cook is on a Grill - outdoors, not this lame stuff inside on a frying pan.

When you grill, professionally speaking!! Sear it on both sides, Ok, It should be hot,! pink,! and juicy !insidehier. Other than that you over cooked it.

The cut depends on what you're "allowed" to put on it.

Fillet - salt & pepper
Porterhouse - salt, pepper, garlic
Strip - salt, pepper, Steak Seasoning (Montreal Steak is great)
London Broil - marinate that baby overnight

Good call using the bullet smoker. I like doing whole chickens or BB ribs in mine. Nothing compares!
