Default oil pressure issues

driving thru the midwest last year, up the mountians and thru the desert my truck will leak oil. i talked to the dealership and they said they added an oil pressure sensor. when i took my trip this year, same thing, hualing ass thru the desert and leaks oil. mostly over the driver side shock tower area. how can i get this under control?

now that im watching the oil pressure guage, driving like an old man reads right at 40. but if i drive normal (which isnt that fast) the guage hits 60.

is this is an oil pressure sensor issue or 37s on stock gears cuasing this?
